The young spirits at the organic Zankl Cheese Dairy have now inherited what had been learned and tested with much blood, sweat and tears for many years by the previous generation: Making cheese from organic milk with a passion.
The brothers Thomas and Lukas produce the finest of raw milk cheese at their innovative, new cheese dairy with a vaulted cellar which is worth a visit.
Surrounded by lush meadows, their mountain farm is located near St. Daniel where their cattle find exactly the blades of grass and herbs which make the hay milk so distinctive. How the finest of cheeses is made from milk with great care and skilful hand movements can be learned during an interesting Slow Food Travel morning with the cheesemakers.
Visitors experience at close range how 200 litres of organic hay milk are turned into tasty mountain cheese or the distinctive farmhouse cheese. It is not a secret that the best cheeses are made from raw milk, hence the milk must be of the highest quality. It becomes even more interesting when the visitors themselves make cream cheese which they can then take home.
Men and beast have formed an economic, cultural and emotional symbiosis for thousands of years. During a joint tour of the farm, the visitors learn that the cattle are not just means of productions for the Zankl Brothers.
A tasty cheese sampling of all cheese specialities at the organic cheese dairy ends an interesting morning. A cheese variation in a hay bed as souvenir delights family and friends at home.
