Summer in a jar – meeting point for the taste from the garden

The techniques are ancient, the taste is hard to beat. Preserving sun-ripened fruits, vegetables and herbs is the passion of Manuel and Claudia Ressi, the proprietors of the Bärenwirt in Hermagor – the Gault Millau Inn of 2018. The two are happy to pass on their knowledge of the fine art of preserving, pickling and desiccating. Together with their guests, they preserve summer aromas for winter in tasty courses at their show kitchen.

Manuel Ressi is a real Gailtal Valley native and he loves the products of his home. The top chef returned to his native home some years ago and runs now – together with his wife Claudia – the Bärenwirt in Hermagor, a meeting point of good taste and regional ingredients. Many of the ingredients are from the own garden and are carefully preserved by the Ressi Family with much dedication and expertise: whether dried, desiccated, pickled or steeped in alcohol, the summer’s wealth of fruits, vegetables and herbs can be enjoyed all year round. The Ressi Family shows how this is done during an extraordinary afternoon course about the preservation of fruits and vegetables in their show kitchen. There is much to sample and try and relevant tips and tricks are provided by the two experienced restaurateurs in addition. With a jar full of summer and sunshine, you are well prepared for the next winter.
