Our Lesachtal bread

Rosa Lanner has been known as the master baker of the original Lesachtal farmhouse bread for more than 30 years. With the bread’s inimitable blend of fine sourdough, grains and water, baked according to an ancient recipe, it has now been awarded officially with the status of UNESCO World Heritage.

 

Lesachtal bread flour

A bread flour made from rye and wheat is used for traditional Lesachtal bread. For this, the harvested grains are first cleaned and then ground in the local water mills and in the electric stone mills of the local farms. The process of milling is done with the grain still fresh so that the flavour and antioxidants are preserved. The whole grain is milled - which is why wholemeal flour is used for baking in the Lesachtal Valley. Only the coarse bran is removed.
